‘Salted’ Caramel, Banana and Coconut Ice-Cream

  • 120g Pitted Dates(about 15 dates)
  • 120ml Water

  • 1 Freezer-friendly container or use a loaf tin

Step 1:

Add chopped bananas, coconut milk, and lemon juice to a blender. Blitz the ingredients until smooth and creamy.

Transfer the banana mixture into a freezer-safe container, then freeze the ice cream for 5 hours. Take the ice-cream out of the freezer after 5 hours and give it a stir to break up any ice crystals. Return to the freezer for another 3-4 hours.

Step 3:

Meanwhile, soak the pitted dates in a cup of warm water for 30 minutes. Drain, then add the dates to a food processor with the Magnesium liquid and water. Blitz for 1-2 minutes. You will end up with a smooth and creamy paste which you’ll use to make caramel swirls in the ice-cream.

Step 4:

Take the ice-cream out of the freezer and let it soften for 30 minutes at room temperature or until it softens enough to make caramel swirls. Use a skewer or a knife to make deep horizontal grooves in the ice cream. Using the skewer or knife, fill the grooves with the date caramel. Finally, using the skewer or knife, swirl the caramel through the ice-cream.

Step 5:

Enjoy as a soft-serve ice-cream, or pop back into the freezer for a few more hours before serving.
